Diploma Programs
The following programs are approved by the Ontario Ministry of Education.
Cook Basic — Level I Program: Cook Basic Level I is a practical 300 hour program that provides students with both valuable theory and extensive hands-on training in classic culinary techniques. Designed by chefs, it meets the needs of students who want to quickly gain real-world training and find work as cooks. Click here to download the course outline.
Cook Advanced — Level II Program: The 300 hour Cook Advanced Program emphasizes meal presentation, food quality and creativity. Students also learn a variety of culinary and kitchen management skills including how to adjust a recipe to accommodate larger or smaller groups, costing, and inventory. Chef De Cuisine: The Chef De Cuisine Program focuses on chef training, teaching basic and advanced culinary techniques in culinary planning, preparation, and presentation, costing, purchasing, menu planning, management and entrepreneurship. The course is extremely practical with 390 hours of experience in the kitchen using professional grade equipment under the supervision of a chef instructor, plus field trips. Culinary Management: The Culinary Management Program prepares you to be a leader in the Food Service Industry. It provides hands-on basic and advanced kitchen experience plus entrepreneurial and management skills. You will learn the principles of effective leadership, costing, purchasing, and human resources as well as cooking and baking skills. Specialist Chef: The Specialist Chef Program provides training in basic skills in the Culinary Arts using extensive hands-on instruction. Personal Chef Diploma: This program is designed for cooks and chefs who want to take advantage of the growing demand for Personal Chefs to operate their own business. More and more people want nutritional home-made meals but haven’t the time or skills to prepare them. The Personal Chef Program teaches small business skills, marketing, advertising, and customer relations.
